Favorite Fair Food

Growing up, the highlight of summer was often going to the fair, sometimes a county fair and other times the big state fair. For us, the prospect of eating pronto pups, was as exciting as the anticipation of riding the ferris wheel or merry go round, for years, these things were only available at the fair.

CORN DOGS

Ingredients
  • 8-10 hot dogs
  • 8-10 wooden sticks (optional)
  • Oil for deep frying
  • Batter
Batter
  • 1 cup flour
  • 2 tablespoons sugar
  • 1½ teaspoons baking powder
  • 1 teaspoon salt
  • 2/3 cup corn meal
  • 2 tablespoons shortening
  • 1 egg, slightly beaten
  • ¾ cup milk

Sift together flour, sugar, baking powder & salt. Stir in corn meal, then cut in shortening. Combine slightly beaten egg & milk and add to dry mixture.

To assure that batter adheres to hot dogs, wipe them off with a paper towel. Insert sticks into hot dogs or just use a fork to roll in batter until coated. Deep fry 4-5 minutes at 350-375 degrees.

Tips: If batter is too thick, add a little milk. Buy good quality hot dogs. Oil can be refrigerated and reused.

CARAMEL CORN

This recipe is also fun to make with or for family and friends!
  • 1 cup brown sugar
  • 1/2 cup butter
  • 1/4 cup syrup
  • ½ teaspoon salt
  • ½ teaspoon soda

4 quarts popped corn
Combine first 4 ingredients and boil for 5 minutes.
Add ½ teaspoon soda. Stir well.
Pour over 4 quarts popped corn.
Spread on cookie sheet and bake at 200 degrees for 1 hour. Stir every 15 minutes.

Tip: Add peanuts, walnuts, pecans, etc.
